Manhattan Restaurant Operations Manager
Overview: Fairmont Chengdu, situated within the Palm Springs International Centre, is located in the heart of Tianfu New Area and Chengdu Hi-tech Zone and is adjacent to the Century City New International Convention & Exhibition Center, Global Center and the Tianfu Software Park.

The hotel features 336 guest rooms, Willow Stream Spa, Gold Executive Floor, over 1,350 square meters of meeting facilities, and a collection of F&B concepts including an all-day-dining restaurant Spectrum, CUBE a three-floor concept - lounge, cocktail bar and restaurant, a signature Sichuan Chinese restaurant Chang Yi, and our feature restaurant and bar occupying the top two levels of the hotel, Manhattan. The hotel opened its door on December 21, 2016.

Summary of Responsibilities:

  • Must act professionally and appropriately at all times.
  • Ensure quality of food and service is kept to the very highest of standards at all times.
  • Implement practices and procedures and consistently review operational standards with the aim of always improving speed and service quality.
  • Contribute feedback to kitchen and other management staff on all aspects of the guests experience.
  • Liaise with events teams and co-ordinate load in and venue set up.
  • Ensure all staff conduct themselves with the utmost integrity.
  • Ensuring venue set up, table set up and venue cleanliness it to an exceptionally high standard.
  • Monitor stock levels and assist department heads in stocktaking procedures.
  • Monitor breakage, storerooms and general respect for company property.
  • Handle guest issues carefully and promptly.
  • Compile department rota in conjunction with AOM and Restaurant Mgr.
  • Follow all legal and hotel regulations.
  • Works closely with reservations/sales to ensure a personal experience is created with all our guests.
  • Assist HR with recruitment of new staff as well as KPI’s and evaluation.
  • Contribute ideas and feedback to sales/marketing and department heads.
  • Engage in social activities outside of the venue, mingle and invite guests and actively promote the outlet.
  • Offer solutions to problems, problem solve and assist in all areas of venue operation as and when required.
  • Training and developing staff, keep up to date records of training.
  • Continually communicate with AOM and Restaurant Mgr on all aspects of the venue.
  • Monitor maintenance issues and ensure that the venue is always in immaculate condition.
  • Perform other tasks as and when directed to assist the smooth operation of the venue.
  • Monitor Floor Supervisors and Assist with all service related activities.
  • Lead by example at all times, this is a very active role and you will need to monitor all Supervisor and wait staff activities constantly moving around the venue.
  • Ensure all guests bills are paid and are correct.
  • Monitor and assist with floor service ensuring guest expectations are always exceeded.
  • Assist in all areas of the venue operation as and when directed.



  • 2+ years’ experience within Hotel/Hospitality industry as a Floor Mgr or Floor Supervisor.

  • Event experience essential.

  • Some experience in a club/lounge bar environment preferred but not essential.

  • Excellent spoken and written English.

  • Experience reading reports and working with hospitality POS Systems.

  • Computer literate (Excel).

  • Able to problem solve and pre-empt issues and problems.

  • Exceptional guest relations skills.

  • Fine dinning experience.

  • Ability to train, lead and mentor staff.

  • Outgoing personality.

  • No criminal record.

  • No social media activities that would bring the brand and venue into disrepute.

Visa Requirements: Must be legally eligible to work in China. The hotel will assist with the working visa for suitable foreign applicants.
