The Role:


We are currently seeking a Full Time Senior Chef de Partie- Pastry to join our dynamic and professional team. Reporting directly to the Head Pastry Chef, you’re responsible for food standards, preparation, presentation and cooking techniques according to established recipes and procedures and will have the opportunity to run your own section, ensuring service is smooth as well as assist with other sections if they require help.

The main duties of this role include:

  • Ensure food standards, preparation, presentation and cooking techniques meet hotel standards and maintained at that level.
  • Work with the kitchen brigade and take corrective action where appropriate if standards are not met.
  • Strive continually for innovative, quality, value for money food, which is presented and served in the most complimentary way.
  • Collate, photograph and cost all recipes. Ensure they are followed accurately, and to the Hotel standards. Food is to be checked and tasted at all times and at the beginning of every service to check for freshness and quality.
  • Cultivate a positive work environment where learning and personal development are benchmarks by which quality improvement is driven
  • Work closely with the front of house team to meet food and beverage operational objectives.
  • Assist with the implementation and maintenance of programs to ensure high standards of cleanliness and organisation within the kitchen and related outlets.
  • Assist the Executive Chef with menu preparation and ensuring adequate supplies are available for expected service.
  • Liaise with Restaurant employees regarding the availability of menu items, additions to the menu and any relevant changes.
  • Delegate duties and responsibilities to kitchen employees to ensure service demands are met.
  • Maintain excellent presentation standards and cost control for all food and beverage outlets, whilst maintaining recipe standards.
  • Prepare and present menu items showing variety and flair, within the cost margins specified by the hotel.
  • Ensure strict stock rotation and minimum wastage. Have stock control procedures implemented and maintained.
  • Works with and co-ordinates the work of apprentices in the preparation and production of food as required.
  • Keep all working areas clean and tidy & ensuring all equipment is maintained, serviced and cleaned to OHS standards.

About You:

  • Previous experience in a similar role
  • Trade qualifications
  • Excellent technical knowledge with experience in all cooking techniques and styles
  • Experience leading staff during service
  • Advanced communication skills
  • Ability to maintain high and consistent standards
  • Excellent organisational skills & grooming standards
  • Understanding of and the ability to maintain food safety standards and HACCP
  • Have a minimum of 3-4 years post apprenticeship experience in a 5 star environment
  • Full working rights in Australia and the ability to work a rotating roster including weeknights, weekends and public holidays
  • Understanding of and the ability to maintain food safety standards and HACCP
  • Have a curiosity and willingness to undertake further self-development
  • Be able to use leaderships skills to maintain a cohesive kitchen team
  • Be able to demonstrate creativity and flair in menu and meal design
